French encores?

Looking for some advice here. Not been climbing at all in the last 2 months and I want to become strong, stronger than I was before and without having to join the Dark side. Yesterday I did French encores (is it?) for the first time doing seven sets of seven. 7 secs on 3 secs off. I rested 50 secs between each set so i would start the next set on the minute.

Just wondered what the normal wait should be before starting the next set? Also these kinda hurt my elbows and wondered if it would be more beneficial to just deadhang off a doorframe? I've been doing the French encores on a pull up bar as i don't have a finger board. Other than that I've been doing routes at the wall to build back the stamina.
