They are animals rather than plants, and what you eat is their muscle ∴ shrimps == meat.

As far as I'm aware, it's not blood oozing out anyway.  SCIENCE.  It's mostly water, fat and myoglobin (which makes it red).

SCIENCE : Technically its called hemolymph fluid (this much I remember from studying), and the wikipedia article I linked indicates that the primary component that transports oxygen isn't myoglobin but hemocyanin and they're not contained in any cells, but free floating (this I didn't remember).
