Partidge with fresh walnuts and truffled crushed parsnips.

I bird per person
4oz fresh walnuts per person
2 small parsnips per person
a good number of shallots
bits and bobs

Take the breasts off the birds and chop the remaining bits (if you're being frugal save the legs for a nice terrine) and to a hot pan add these with an onion, carrot a few bits of celery and brown.  When nicely browned add some garlic, thyme and parsley and enough water to cover.  Simmer with a lid for 30 minutes and strain.

Reduce the stock and add some good unsalted butter and brandy to finish.

Fry the shallots until nicely done and add the fresh walnuts to the hot and turn off the heat.  Leave for the garnish.

Take the core from the parsnips and slowly saute in butter until soft.  Crush or roughly blend and then add some truffle oil and butter. Reserve

Brown the partidge breasts in a hot pan on both sides then put in a medium oven for a bit, maybe 1o minutes or so depending on the heat.  By now you should have finished your second pint of ale.

Warm the parsnip, walnuts and shallots and sauce.

Spoon the parsnips into a pile on the middle of the plate and spread the nuts around.  Place the now slightly pink breasts on top of the pile and put some sauce around it.

Garnish with ripped sage.

To drink a nice Claret or maybe red Loire.

Next week we'll have a non diet recipe.

There sure are a lot of murderers in the world, lions, cheetahs, killer whales, sharks, blue whales (krill are after all animals and constitute meat), oh yeah and humans, who evolved as omnivores replete with the dentistry for tearing shreds of meat off the bone and masticating it with saliva to aid its subsequent digestion.  :P

Pigs troughers (a credit crunch special)

Let the pigs take over the farm
Pigs organise unlimited grub for themselves and sell remainder to other downtrodden animals that can't afford it
farm goes bust
give pigs yet more unlimited grub
send big fat bill to the rest of the farm animals
insist other farm animals go on an immediate diet because the whole mess is obviously their fault
serve with a generous helping of humbug
