Yes, finely grate 2/3 the horseradish and leave in milk for about 2-6 hors, depending on how green i.e. fresh the horseradish is, remove the horseraish and chill with a little lemon juice (to keep it white) and salt.
Add a finely chopped potato to the milk and cook until the potato has in effect disintegrated into a very loose mash (like thick wall paper paste), you may care to add a bay leaf, rosemary, some juniper, even a clove or two but I like the sauce to be 'clean' and sharp and I find these flavours detract although with gravadlax I'd add the rosemary &juniper.
let this taste and season. Add a bit of the 'gloop' to the horesradish and then add the soaked horseradish and keep this in the fridge, when you're ready to make the fresh sauce use the gloop and add freshly grated horseradish and some sour cream / creme fraiche and on y va!
