Title: Monkfish Liver
Post by: Sloper on September 25, 2009, 04:26:58 pm
Got some today from J H Mann on Sharrow Vale Road at a very reasonable £8 per kg but its the first time I will have tried this and although I've got a couple ideas for a recipe I was wondering if anyone else has ahd this and could give some suggestions.

PS it's supposed to be the foie gras of the oceans so a good one for those who'se ethics preclude the real stuff.

the aforementioned liver, bacon and pea shoot salad iirc

although this (http://www.monkfish-liver.com/an/recipes/10_monkfish-liver-smoked-duck-breast-and-chocolate.html) sounds an interesting flavour combination

I think that's using cooked liver, I'm going to flash fry it and serve with a surf clam and tarragon sauce, maybe with some beetroot?
