had this from bagel station at manc piccadillyo a few years ago and made it a few times since

tuna mayo topped with cheese slice, warmed then finished with bell peppers

Soft Brie, green tarty apple and lots of black pepper. Serve open on two halves rather than closed.

I forgot to mention to toast both halves first and for extra goodness heat under the grill to soften the Brie.  :)

Do you toast both sides of both halves before putting the cheese on or after? Or is that a line of questioning best not revisited.

Personally I don't think bagels are very good for melting cheese on.

 :) I think Chris had that thread in mind when he posted his response.

Melting the Brie is rubbish anyway. Toasted on both sides and the Brie should be at room temperatue before slicing and placing on the bagels. A quick flash under the grill rather than a full melting will do the trick.

We used to enjoy a pre-cragging early morning 'Eggel' at the local bakery when we were staying in Chatanooga. Toasted 'everything' bagel filled with scrambled egg and melted swiss cheese. The application of ketchup only improved matters, as I recall. The missus tells me that the fact that the egg was beaten and then microwaved in a suitably bagel sized receptacle is crucial, as this puts your eggs somewhere between scrambled and an omlette. Not important you might think, but you'd be wrong. Popular with the local cops in the deep south, so you know you're onto a winner.

As a general rule of thumb, any American eateries you find with 20 cop cars outside first thing in the morning will be the best place for breakfast in the county. Just don't tell the waitress, "I'll have what the fat pigs are eating" in a loud voice, as this often turns things ugly....

Good ham, dijon, decent coleslaw.

Or swap the good ham for good brie, equally good.

Actually, why do I say 'good'? Make it all good, don't serve / eat shit food.

Slightly melted brie , soft enough so it'll spread , cranberry jelly and some crisp lettuce is very nice ......
