Title: Sea Bass
Post by: Houdini on January 02, 2010, 04:43:38 pm
I went for a mooch and came back w/ 3 Sea Bass.

I was going to wrap it in foil having stuffed it w/ a slice or 2 or lemon, fresh parsley, and some capers.

I'm pretty sure this will be fine, but is there a tastier way to cook this fish?

Gonna cook in around 1 1/2 hrs so if you're bored and want to help, do.

Ah, nay bortha.

Got bored and started cooking early; stuffing it w/ parley, whole pepper corns, lemon.  Salt and pepper & a bay leaf on the skin (both sides) wrapped in greaseproof.  Serving w/ steamed green beans and boiled potato.  No sauce.

I'm having veggie sausages  :'( seems pretty poor in comparison ...

I love it like this... Slash the skin stuff with parsley, basil and thyme, season really well. Lay a single layer of thinly sliced potatoes in the oven, once they're mearly done add some mixed mushrooms fried in butter and garlic, with any remaining herbs and about half a lemon's juice. Then mix this in with the potatoes and put the sea bass on top - then cook in oven for as long as your sea bass needs - the fatter the fillets the better.serve with some lemon wedges and a nice white.
