There are a few UK insurers that will include Morocco in a similar way to normal european cover but if yours doesnt then you can buy third party cover at the border. This costs 950 dirhams (about £70) for a month or about double that for 3 months. It is only third party so you have to take the chance of any damage that might occur to your own vehicle, but is still well worth having as you could end up in a Moroccan jail if you have an accident without it! We got the ferry to Tanger Med (which is probably the least chaotic of the entry ports) and there was a portacabin just before the port exit which sold the insurance. It was significantly better to pay in dirhams than euros due to the exchange rate they offered and there were other portacabins offering currency exchange at decent rates alongside.
