Er no Shark, good terrazzo is proper complicated, if you want a decent finish. Don't know of anyone who specialises in it, but it is a very specialised thing. Just for starters type of aggregate - size, colour, shape. Depth of pour, if you're going to use a sexy (read expensive) finishing aggregate how deep do you want the top (visible ) polished layer to be? what do you lay the finishing layer on ... don't let someone "have a go".
