wet garlic
June 14, 2009, 12:27:27 pm
I've just picked a couple from the garden and fancy cooking them up for tea.
I've seen mr HFW's recipe for bhajis, yet I haven't got the ingredients.
Favourite at the moment is Riverfords Potato and wet garlic cakes as the cupboard says yes.
Anyone out there with any experience of cooking these little fellas, with simple recipes to recommend?

Ignore if you think I'm  :off: However what I do with fresh green (wet) garlic bulbs is:
Chop the white, fine, save the green for stock. Boil good dried spaghetti drain reserving 2-3 tablespoons of the cooking water.  Cooking pan back on the heat add 50g of butter& the cooking liquid followed by the garlic and then the spaghetti. Mix until all is glossy and coated. Finish with one shitload (this is a technical cooking term you may need to look up) of  Parmesan grated over. Eat, but snog no one who has not been eating with you.

Fresh garlic soup, 1 head of fresh garlic per 2 people,

Fry the roughly chopped head of garlic in a lot of butter, add some well herbed chicken stock and simmer ofr 10 minutes. Allow to cool and blend, add plenty of double cream and a good splosh of truffle oil and chopped parsely.

yum yum - two tasty sounding pots there.
The missus is away for the week and I have a glut of self seeded 'bulbs' so I might try both (veggie stock rather than the feathery variety though for me.)
The potato cakes were also rather yum btw.
Next want is for good broad bean recipes - they'll be glutting soon.
